Jean-François Ganevat

Rotalier, Jura (Francia)

Jean-François Ganevat runs Domaine Ganevat in Rotalier, in the southern Jura, on a family property dating back to 1650 that he has transformed into an absolute benchmark of natural wine worldwide. After training in Burgundy with Jean-Marc Morey at Chassagne-Montrachet, he returned in 1998 to convert the domaine to organic farming and then, from 2006, to biodynamics. Across his approximately 13 hectares he cultivates an extraordinary mosaic of over 45 varieties, including extremely rare cultivars such as Petit Béclan, Enfariné Noir, and Gueuche Noir.

In the cellar he works with long indigenous-yeast fermentations, aging in old demi-muids, and minimal to no sulfur additions. He produces between 35 and 40 different cuvées per year — exploring the five Jura varieties (Savagnin, Chardonnay, Pinot Noir, Trousseau, Poulsard) in both ouillé and sous voile styles. His ability to translate terroir, variety, and vintage into wines of extraordinary purity and complexity has made him one of the most sought-after and influential winemakers in Europe.
