At Filiera, mornings are shaped by care, intention, and connection — not routine. From the first light of day, we celebrate coffee as a crafted experience, grounded in knowledge, respect for origin, and a deep appreciation for those who grow it. We are proud to serve specialty coffee from Santa Domenica, the roastery and project led by Francesca Surano, a leading voice in the Apulia specialty coffee movement.

Santa Domenica is more than a roastery: it is a cultural project born from Francesca's decades of experience in coffee — from training and consulting to working directly with producers in Central America. Her work reflects a commitment to sustainable, traceable specialty coffee, selecting beans grown with care and roasted to highlight their unique character. Each cup carries the story of the land it comes from and the people who cultivated it.

Our coffee program features beans sourced from carefully selected growers, roasted to reveal nuance, clarity, and balance, and brewed with precision. From espresso that awakens the senses to filter coffee that invites you to linger, every cup is more than a drink — it is a connection to the land, to the season, and to the hands that nurtured it.

Alongside coffee, our morning menu celebrates simplicity, seasonality, and quality. From signature toasts and seasonal pastries to wholesome salads and thoughtfully curated breakfast and lunch plates, every dish complements the cup in front of you and reflects Filiera's philosophy: food and drink rooted in sustainability, crafted with care and precision, and shared with meaning.
