Cava verde

La Cava Verde Bio Farm is an organic farm in Calimera, in the heart of the Grecìa Salentina, the small Greek-origin enclave in northern Salento. All cultivation strictly follows organic farming criteria and the rhythms of the seasons: the farm's products — vegetables, greens, and flowers — come to the table only when nature allows, with no forcing and no artifice. The farm is part of the Campagna Amica network, committed to a direct and transparent relationship with its customers.

Animal welfare is a founding principle of the project: livestock is raised according to ethical standards fully consistent with the organic values that guide the entire operation. La Cava Verde's philosophy is that of a short, conscious supply chain — from producer to consumer — where respect for the land and seasonality are not a marketing choice but a way of being in the world.
